Sometimes you just need a little comfort food, ya know what I mean?

Creamy Macaroni & Cheese
1 (16 oz) box of Velveeta, cubed
1 (12 oz) can evaporated milk
1 (11 oz) can cheddar cheese soup, undiluted
1 cup (4 oz) shredded sharp cheddar cheese
1 (12 oz) package of elbow macaroni, cooked
20 saltine crackers, crushed
2 - 3 tablespoons of melted butter
Melt first four ingredients together in a saucepan over medium heat. Stir constantly until cheese mixture is nice and smooth.
Stir in cooked macaroni.
Spoon macaroni & cheese into a greased baking dish (11" x 7".)
Toss together cracker crumbs & butter.
Sprinkle over macaroni.
(At this point you can cover and refrigerate for baking later, just set out for about 30 minutes before baking.)
Bake at 350 degrees for 25 minutes or until lightly browned.
Serves 6 to 8
