Purple & Yellow Cake

Again, I was honored to be asked to make a birthday cake for a new teenager!
Her favorite colors are purple and yellow.  Though I am no LSU fan, I was happy to oblige her request.




The cake is made from Red Velvet cake.  Each tier is comprised of two layers cut horizontally in half and then filled with Cream Cheese Frosting.  Yummy!

Fresh Strawberry Cake with Cream Cheese Frosting


This cake was created to celebrate a 40th birthday.
The birthday girl's only request was a stawberry cake with cream cheese frosting.  It didn't matter to her what it looked like, she just wanted it to taste good.  Well, tasting good is always my top priority, but I really like for it to look good too!
If you know anything about my cakes, you know I just hate to deliver a short cake...don't know why, I just do.  Tall cakes just look prettier to me.
Soooo, to make this two layer cake have a little more impact I made it a four layer cake.  (To those new to baking...I'm not a magician, I just sliced each layer in half horizontally...really, someone would send me an email asking me how to do it...which is ok, just saving myself some time on the front end.)
I added fresh strawberries between layers of cream cheese frosting between layers of cake.
Rumor is that it was the best strawberry cake they had ever had.  
Poteet Strawberry Festival Cake
2 1/4 cups flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1 3-ounce package strawberry gelatin
3/4 cup vegetable oil
4 eggs
1 10-ounce package frozen sliced, sweetened strawberries, thawed
(or 1 pint fresh berries, sliced and mixed with 1/2 cup sugar)

In a large mixing bowl, combine all ingredients.  Beat at medium speed for 2-3 minutes until well blended.  In two greased and floured 9-inch round cake pans, pour the batter and bake 30 to 40 minutes in a preheated 350 degree oven.  (Use toothpick method to check for doneness.)  Cool 10 minutes before removing from pans. 
Serves 12 - 16

Red Velvet & Vanilla Cupcakes with Cream Cheese Frosting

My sweet little boy's 5th birthday occurs two days after Christmas.   Subsequently, his preschool teachers (he goes to two) wanted to celebrate his birthday before the holidays.  No problem...I don't have anything else going on anyway! (smiles!!)

Anyway, I asked my little guy what kind of cupcakes he would like for his birthday at school.  He said, "Red velvet, vanilla & chocolate."  Well, I finally got him to narrow it down to Red Velvet and Vanilla.  I used the zebra cake method and alternated putting in red velvet cake batter and vanilla cake batter.  They turned out beautifully...very Christmas-like (or in our case, very festive and birthday-like!)  He thought they were great!

Chocolate Chocolate Chip Cupcakes with Cream Cheese Frosting

So, on Tuesday I shared with you Chocolate Chip Cookie Dough Cupcakes that I saw at Whimsical Creations...they just looked so yummy.  Today, I decided to give them a try with a little twist.
Instead of vanilla cake I chose Dark Chocolate Cake.  I just had to see how they tasted.
My taste testers all agreed...YUMMY!
I frosted them with Food Processor Cream Cheese Frosting...super easy and super good. 
Look at that cookie dough goodness...mmmmmm!
The key is to make the cookie dough without the eggs and freeze them in balls for several hours.
Fill the cupcakes evenly with cake batter then add the frozen cookie dough balls.
The cupcake bakes but the cookie dough remains soft and gooey.

My quick and easy version:
Make a recipe of Nestle's Tollhouse Cookies
 (omitting the eggs and adding a couple of extra tablespoons of butter.)
Form cookie dough into large tablespoon sized balls.
Put in freezer for several hours or overnight.
When ready to make the cupcakes:
Prepare cake mix according to directions on package.  (I used Duncan Hines Chocolate Fudge Cake Mix.)
Fill cupcake liners 2/3 full with cake batter.
Top with frozen cookie dough ball.  (The batter covers the frozen ball during baking.)
Bake according to package.  (Mine took 19 minutes.)
Let cool in pans for about 10 minutes, then let them cool on rack.
Frost with frosting of your choice.  (I used Cream Cheese Frosting.)

Food Processor Cream Cheese Frosting

Going on thru November 6th.

This is the quickest and best recipe for Cream Cheese Frosting I've found.  I used it when I made these crazy good Chocolate Chocolate Chip Cookie Dough Cupcakes.  When you put this frosting together, be sure the cream cheese is COLD...not room temperature.  The butter can be either.  Also, be sure that you don't OVERPROCESS.  It may come out grainy and not hold its shape very well.


Cream Cheese Frosting

8 oz cream cheese, cold, cut into even chunks
3 - 6 tablespoons of unsalted butter, room temp or cold, cut into even chunks
2 1/2 teaspoons vanilla
2 1/2 cups powdered sugar, sifted (this step is a MUST)

Combine above ingredients in food processor and blend until smooth and creamy.

Recipe as is well frost 12 - 14 cupcakes with "big" frosting.  Double recipe for 24 cupcakes or for 2-3 layer cake.

Perfect on, well, just about everything!  Smiles!

Earth Day Cupcakes

Found these cute Earth Day cupcakes on bystephanielynn.com. Aren't they great? And super easy! We added a sparkly cloud of cream cheese icing on top. Hope the kids at the boys' school like them!
